Add beef broth, thyme, Worcestershire sauce, and salt and pepper to taste. Simmer for 30 minutes
Heat the oven broiler
Ladle soup into oven safe serving bowls and place one slice of bread or a few croutons on top of each bowl of soup. Top bread or croutons with 1 tbsp shredded swiss cheese and 1 tsp shredded parmesan cheese for each bowl
Place bowls on cookie sheet and broil in preheated oven until cheese bubbles
Notes
Add a few dashes of white wine when adding beef broth if preferred. Use cheese of your choice either shredded (which I like) or sliced. Leave soup under the broiler longer until cheese browns if desired.
