French Onion Soup

This soup is rich and simply delicious! Make sure to really caramelize the onions slowly over low heat using a large Dutch oven or saucepan. Drop in some delicious garlic butter croutons or toasted bread topped with swiss and parmesan cheese.

Ingredients

  • 4-5 cups sliced onions 1/2 inch thick
  • 1/2 cup butter
  • 5 1/4 cups beef broth
  • 1 tsp dried thyme
  • 1 tbsp Worcestershire sauce
  • salt and pepper to taste
  • 4 slices toasted bread or use croutons is desired
  • 4 tbsp shredded swiss cheese
  • 4 tsp shredded parmesan cheese

Instructions

  • Melt butter in a large Dutch oven or saucepan over low heat. Add onions and cook on low heat until caramelized stirring occasionally about 45 minutes
  • Add beef broth, thyme, Worcestershire sauce, and salt and pepper to taste. Simmer for 30 minutes
  • Heat the oven broiler
  • Ladle soup into oven safe serving bowls and place one slice of bread or a few croutons on top of each bowl of soup. Top bread or croutons with 1 tbsp shredded swiss cheese and 1 tsp shredded parmesan cheese for each bowl
  • Place bowls on cookie sheet and broil in preheated oven until cheese bubbles

Notes

Add a few dashes of white wine when adding beef broth if preferred.  Use cheese of your choice either shredded (which I like) or sliced.  Leave soup under the broiler longer until cheese browns if desired.
