This homemade delicious side dish is a no fail, simple recipe. I leave in the seeds and membranes of the jalapenos for more heat but if you prefer less spice, remove them.

Ingredients

  • 1 cup cornmeal
  • 1 cup flour
  • 2/3 cup white sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1/3 cup vegetable oil
  • 2 1/2 tbsp butter melted
  • 1 tbsp honey
  • 2 eggs beaten
  • 1 1/4 cups buttermilk
  • 1 jalapeno diced

Instructions

  • Preheat oven to 350 degrees F. Grease 8×8 inch baking dish
  • In a large bowl stir together cornmeal, flour, sugar, baking powder, salt, and baking soda. Pour in the vegetable oil, melted butter, honey, beaten eggs and milk until combined. Stir in diced jalapenos
  • Pour the batter into the prepared baking dish and bake in preheated oven for 40 minutes, until the top of the corn bread starts to brown and show cracks
