Sausage and Pepper Potato Bake

This is very simple to make. I have used kielbasa in place of the Italian sausage, use any sausage you prefer. The aroma of this delicious dish cooking will make anyone gather around! Bring this to any gathering and it won't last long!

Ingredients

  • 1 tsp olive oil
  • 1 pound Italian sausage cut into 2 inch pieces
  • 2 tbsp olive oil
  • 2 pounds small creamer potatoes washed and cut in half
  • 1 green bell pepper seeded and sliced
  • 1 red bell pepper seeded and sliced
  • 4 garlic cloves peeled
  • 1 large onion sliced
  • 1 cup chicken broth
  • 1 tsp Italian seasoning
  • salt and pepper to taste

Instructions

  • Preheat oven to 400 degrees F
  • Heat 1 tsp olive oil in a large skillet or dutch oven over medium heat. Cook and stir the sausage until browned. Transfer cooked sausage into a large baking dish. Add 2 tbsp olive oil to the skillet and cook the potatoes stirring occasionally until browned about 15 minutes. Place potatoes into baking dish. Cook green pepper, red pepper, whole garlic cloves, and onion in same skillet about 5-8 minutes. Add vegetables to the baking dish.
  • Pour chicken broth into the baking dish. Add Italian seasoning, salt, and pepper. Gently stir all together until combined
  • Bake in preheated oven until hot and bubbly about 25-30 minutes
