Pancakes, hotcakes, griddlecakes, flapjacks….whatever you prefer to call them, they are a wonderful meal anytime of the day! Homemade, simple, and delicious! This will be your new favorite pancake recipe.

Ingredients

  • 1 3/4 cups buttermilk
  • 1/4 cup white sugar
  • 2 cups flour
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 eggs
  • 1/4 cup butter melted

Instructions

  • In a large bowl mix together sugar, flour, baking soda, baking powder, and salt.
  • In a small bowl whisk eggs, melted butter, and buttermilk until well combined
  • Pour wet ingredients into dry ingredients and mix until combined
  • Heat griddle or skillet on medium heat and coat with cooking spray. Pour desired amount of batter onto griddle/skillet and cook until bubbles appear. Flip and cook until brown on other side

Notes

If you don’t have buttermilk on hand, measure 1 1/2 cup of regular milk.  Add 1/4 cup white vinegar to milk and let sit for at least 5 minutes.  Voila, buttermilk!!
