Ingredients

  • 4 boneless skinless chicken breasts
  • 3 tbsp olive oil divided
  • 1/2 cup flour
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 large onion diced
  • 1 carrot diced
  • 1/4 cup zucchini diced
  • 2 cups chicken broth
  • 6 oz can tomato paste
  • 1 tsp italian seasoning
  • 1/2 tsp crushed red pepper

Instructions

  • Mix flour, garlic powder, salt, and pepper in a shallow bowl. Add chicken to bowl and coat with flour, shake of excess and set aside
  • Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add chicken and cook 4 minutes on each side or until golden brown. Remove chicken from pan
  • Heat remaining 1 tbsp oil in skillet. Add onions and carrots and cook stirring occasionally about 4 minutes. Stir in broth, tomato paste, italian seasoning, and crushed red pepper
  • Return chicken to skillet; spoon sauce over chicken. Bring to boil. Reduce heat and simmer for 15 minutes. Add zucchini and simmer for additional 5 minutes
  • Serve over pasta of choice
