Ingredients
4boneless skinless chicken breasts
3tbspolive oildivided
1/2cupflour
1/4tspgarlic powder
1/4tspsalt
1/4tsppepper
1/2large oniondiced
1carrotdiced
1/4cupzucchinidiced
2cups chicken broth
6oz cantomato paste
1tspitalian seasoning
1/2tspcrushed red pepper
Instructions
Mix flour, garlic powder, salt, and pepper in a shallow bowl. Add chicken to bowl and coat with flour, shake of excess and set aside
Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add chicken and cook 4 minutes on each side or until golden brown. Remove chicken from pan
Heat remaining 1 tbsp oil in skillet. Add onions and carrots and cook stirring occasionally about 4 minutes. Stir in broth, tomato paste, italian seasoning, and crushed red pepper
Return chicken to skillet; spoon sauce over chicken. Bring to boil. Reduce heat and simmer for 15 minutes. Add zucchini and simmer for additional 5 minutes
