Chicken and Dumplings

This is a family favorite. The homemade flavorful creamy chicken broth and the perfect fluffy dumplings are a delicious combination. This is comfort food at it's best and worth the time and effort. I love the smiles of total satisfaction that comes with this bowl of bliss!

Ingredients

  • 1 whole chicken cut into serving pieces
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp paprika
  • 2 tbsp olive oil
  • 10 cups water
  • 3 tbsp chicken base
  • 1/2 tsp dry parsley
  • 4 tbsp butter
  • 1 12 oz can evaporated milk

For the dumplings

  • 1 cup flour
  • 2 tsp baking powder
  • 1/2 tsp white sugar
  • 1/2 tsp salt
  • 1 tbsp butter
  • 1/2 cup milk

Instructions

  • Rub cut chicken pieces well with salt, pepper, and paprika. Heat 2 tbsp olive oil over medium high heat in a large 6 to 8 quart stew pot. Place chicken in pot and cook 3-5 minutes per side or until golden brown
  • Slowly pour in 10 cups of water in the pot over chicken and bring to boil. Add chicken base. Reduce heat to low and simmer for 45 minutes
  • Remove chicken from the pot and let cool until able to safely handle. Discard bones and skin from chicken pieces and shred the meat
  • Carefully place shredded meat back into the broth. Add dry parsley, butter, and evaporated milk and continue simmering

For the dumplings

  • In a medium bowl stir in flour, baking powder, sugar, and salt. Cut in butter until crumbly. Stir in milk to make a soft dough
  • Drop by spoonful's into boiling broth. Cover and simmer 15 minutes without lifting lid. Serve.
