Chicken and Dumplings
This is a family favorite. The homemade flavorful creamy chicken broth and the perfect fluffy dumplings are a delicious combination. This is comfort food at it's best and worth the time and effort. I love the smiles of total satisfaction that comes with this bowl of bliss!

Ingredients
- 1 whole chicken cut into serving pieces
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp paprika
- 2 tbsp olive oil
- 10 cups water
- 3 tbsp chicken base
- 1/2 tsp dry parsley
- 4 tbsp butter
- 1 12 oz can evaporated milk
For the dumplings
- 1 cup flour
- 2 tsp baking powder
- 1/2 tsp white sugar
- 1/2 tsp salt
- 1 tbsp butter
- 1/2 cup milk
Instructions
- Rub cut chicken pieces well with salt, pepper, and paprika. Heat 2 tbsp olive oil over medium high heat in a large 6 to 8 quart stew pot. Place chicken in pot and cook 3-5 minutes per side or until golden brown
- Slowly pour in 10 cups of water in the pot over chicken and bring to boil. Add chicken base. Reduce heat to low and simmer for 45 minutes
- Remove chicken from the pot and let cool until able to safely handle. Discard bones and skin from chicken pieces and shred the meat
- Carefully place shredded meat back into the broth. Add dry parsley, butter, and evaporated milk and continue simmering
For the dumplings
- In a medium bowl stir in flour, baking powder, sugar, and salt. Cut in butter until crumbly. Stir in milk to make a soft dough
- Drop by spoonful's into boiling broth. Cover and simmer 15 minutes without lifting lid. Serve.
