Ingredients
1whole chickencut into serving pieces
1tspsalt
1/2tsp black pepper
1/4tsp paprika
2tbspolive oil
10cupswater
3tbspchicken base
1/2tspdry parsley
4tbspbutter
112 ozcan evaporated milk
For the dumplings
1cupflour
2tspbaking powder
1/2tspwhite sugar
1/2tspsalt
1tbspbutter
1/2cupmilk
Instructions
Rub cut chicken pieces well with salt, pepper, and paprika. Heat 2 tbsp olive oil over medium high heat in a large 6 to 8 quart stew pot. Place chicken in pot and cook 3-5 minutes per side or until golden brown
Slowly pour in 10 cups of water in the pot over chicken and bring to boil. Add chicken base. Reduce heat to low and simmer for 45 minutes
Remove chicken from the pot and let cool until able to safely handle. Discard bones and skin from chicken pieces and shred the meat
Carefully place shredded meat back into the broth. Add dry parsley, butter, and evaporated milk and continue simmering
For the dumplings
In a medium bowl stir in flour, baking powder, sugar, and salt. Cut in butter until crumbly. Stir in milk to make a soft dough
Drop by spoonful's into boiling broth. Cover and simmer 15 minutes without lifting lid. Serve.
