Burrito Pie

This is a dish I have been making for years. It's a simple and delicious meal that can be on the table in a flash!

Ingredients

  • 1 pound ground beef chuck
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/4 cup taco sauce additional for topping pie if desired
  • 1 16 oz can refried beans
  • 1 4 oz can diced green chilis
  • 8 8 inch flour tortillas
  • 1 cup cheddar cheese shredded
  • sliced jalapenos and diced tomatoes for toppings optional

Instructions

  • Preheat oven to 350 degrees F. Spray baking sheet with non-stick cooking spray
  • In a large skillet over medium heat, cook the ground beef 5-7 minutes, drain excess fat if desired. Stir in salt, pepper, garlic powder, paprika, ground cumin, and chili powder. Cook for 2 more minutes
  • Mix in the taco sauce, refried beans, and diced chilis and heat through
  • Making 2 pies, place two tortillas sided by side and spread a thin layer of meat mixture on each tortilla about 1/4 cup. Top meat mixture with about 2 tbsp shredded cheddar cheese on each pie. Add another tortilla on each pie and spread on another thin layer of meat mixture and cheese. Repeat this 2 more times ending with thin layer of meat mixture and cheese on top
  • Place pies on prepared baking sheet and bake for 10-15 minutes or until cheese is melted and desired tortilla crispiness is reached. Top with sliced jalapenos, diced tomatoes, and taco sauce if desired
