Chocolate Truffles
Why pay a fortune for truffles when you can easily make them at home with only a few ingredients. Substitute vanilla extract with any flavored extract of choice (almond, orange, strawberry, etc.) I usually double the batch and make 2 different flavored truffles. Try this recipe; you won't be disappointed!

Ingredients
- 1 8 oz package cream cheese softened
- 2 cups chocolate chips melted
- 2 cups confectioners sugar
- 1 1/2 tsp vanilla extract or extract of choice
- 1 pound chocolate almond bark
Instructions
- In large bowl beat cream cheese until smooth. Beat in confectioners sugar gradually until combined
- Blend in melted chocolate and extract until well combined and no streaks remain
- Refrigerate mixture for about an hour
- Line baking sheet with wax paper. Remove mixture from refrigerator and shape into 1 inch balls and place on lined baking sheet. Refrigerate for at least 30 minutes
- Melt chocolate almond bark according to package directions. Using a fork, roll truffles into melted almond bark and coat completely, drain off excess and place on wax paper lined baking sheet until almond bark hardens completely
- Place finished truffles into covered container and store at room temperature
