Simple Cinnamon Swirl Bundt Cake

Ingredients

  • 3/4 cup butter room temperature
  • 1 1/2 cups white sugar
  • 1 tsp vanilla extract
  • 3 eggs
  • 1 cup sour cream
  • 2 1/2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tbsp ground cinnamon
  • 1/2 cup brown sugar

Instructions

  • Preheat oven to 350 degrees F. Grease a 10 inch Bundt pan and coat the pan with some cinnamon and sugar
  • In a large bowl, beat the butter and white sugar with and electric mixer until light and fluffy. Add eggs and blend well. Blend in vanilla extract
  • In a smaller bowl, combine flour baking powder, and baking soda. Add flour into butter mixture alternately with the sour cream. Mix until incorporated. Pour half of the batter into the prepared pan
  • In a small bowl, mix brown sugar and cinnamon and sprinkle the mixture over the batter in pan
  • spoon remaining batter over cinnamon mix
  • Bake in preheated oven for about 50 minutes or until toothpick inserted into cake comes out clean

Notes

For a healthier option, substitute greek yogurt for the sour cream.
