Chicken and Zucchini in Red Sauce
A simple homemade delicious dinner that can be cooked and on the table in no time! Chicken breasts smothered in a tasty red sauce with vegetables that can be served over pasta of your choice.

Ingredients
- 4 boneless skinless chicken breasts
- 3 tbsp olive oil divided
- 1/2 cup flour
- 1/4 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2 large onion diced
- 1 carrot diced
- 1/4 cup zucchini diced
- 2 cups chicken broth
- 6 oz can tomato paste
- 1 tsp italian seasoning
- 1/2 tsp crushed red pepper
Instructions
- Mix flour, garlic powder, salt, and pepper in a shallow bowl. Add chicken to bowl and coat with flour, shake of excess and set aside
- Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add chicken and cook 4 minutes on each side or until golden brown. Remove chicken from pan
- Heat remaining 1 tbsp oil in skillet. Add onions and carrots and cook stirring occasionally about 4 minutes. Stir in broth, tomato paste, italian seasoning, and crushed red pepper
- Return chicken to skillet; spoon sauce over chicken. Bring to boil. Reduce heat and simmer for 15 minutes. Add zucchini and simmer for additional 5 minutes
- Serve over pasta of choice
