This recipe is quick, simple, and delicious. This pizza dough makes two 14-16 inch round pizzas. It bakes up beautifully in the oven on a pizza screen. This dough has a wonderful texture, crispy exterior and chewy interior. I make it 3 days in advance for the best texture.

Ingredients
5cupsbread flour
2tspsalt
2tspsugar
1tspinstant yeastuse 2 tsp if using dough same day
1tbspolive oil
2cupslukewarm water
Instructions
Using stand mixer fitted with a dough hook, briefly mix dry ingredients together in mixing bowl. Add liquid ingredients and mix on low speed about 1 minute or until all the flour is incorporated
Let dough rest in mixing bowl for 5 minutes. Mix dough on low/medium speed for an additional 1 minute. Inspect dough texture and add small amounts of water or flour as needed until the dough is slightly sticky
Mix dough on low/medium speed for 5 minutes. Dough should be smooth and elastic at this point. Shape into ball, and place into large oiled bowl. Cover bowl with towel and let rise until doubled in size about 1 to 1 1/2 hours
Punch the dough down and divide into two equal pieces. The dough can be stretched and made into a pizzas at this point. For best results, shape the dough into 2 balls and rub lightly with oil. Place on oiled baking sheet and cover with plastic wrap. Refrigerate for 2-3 days. Remove dough from refrigerator and let come to room temperature for at least 2 hours before making pizza
Preheat oven to 525 degrees F. Roll out each pizza dough on floured surface for 12 inch pizza. and place on pizza pan or screen. Top with desired toppings, place on bottom oven rack, and bake for 8 minutes or until crust is to your liking. Place pizza on top rack and broil for a couple more minutes if desired.
Notes
I double or triple the dough ingredients and freeze dough until ready to use. Make sure to take out of freezer a day in advance to allow to thaw.
