This homemade, simple, delicious recipe is my husbands favorite main course. He prefers very hot peppers like habaneros or scotch bonnets but I like it a little milder so I use jalapeno peppers. Choose whatever peppers you like. If you're not a big fan of spice, remove the membranes and seeds from the peppers before adding to the marinade.

Ingredients
1white onion quartered
6green onions chopped
4garlic cloves
2-3scotch bonnet or habanero peppers choppedmay remove seeds and membranes for less spice; may use hot pepper of your choice
3/4cupsoy sauce
1/2cupwhite vinegar
1/4 cupvegetable oil
2tbspbrown sugar
1 1/2tbspfresh thyme
1/2tspground nutmeg
1/2tspground allspice
1/2tspground cloves
2poundschicken thighs or breastswe prefer boneless skinless chicken thighs
Instructions
Place all ingredients except chicken into a food processor or blender and mix for about 20 seconds until well combined
Place chicken into Ziploc bag or medium bowl and coat with marinade. Refrigerate at least 5 hours, preferably overnight
Preheat outdoor grill to high heat and oil grill grate
Cook chicken on grill for about 10-12 minutes or until juices run clear. If using bone in chicken, cooking time may need to be increased
