Ingredients
Cake
2cupswhite sugar
1 3/4 cupsflour
3/4 cupcocoa powder
1 1/2tspbaking powder
1 1/2tspbaking soda
1tspsalt
2eggs
1cupmilk
1/2cupvegetable oil
1cuphot coffee
Frosting
1/2cupbuttermelted
2/3cupcocoa powder
3cupspowdered sugar
1/3cupmilk
1tspvanilla extract
Instructions
For the cake
Preheat oven to 350 degrees F. Grease two 9 inch cake pans. Place parchment paper in the bottom of each cake pan if available and grease paper
In a large bowl, mix together sugar, flour, cocoa powder, baking powder, baking soda, and salt. Add eggs, milk. oil, and vanilla. Mix with electric mixer for a couple minutes. Stir in the hot coffee and pour into prepared cake pans. Batter is supposed to be thin
Bake for 30-35 minutes or until toothpick comes out clean when inserted into center of the cake. Cool in pans before inverting onto cake platter.
For the frosting
Stir cocoa powder into melted butter
Using electric hand mixer add powdered sugar and milk alternately until desired consistency. Mix in vanilla
To assemble cake
Place one layer of cake on the cake platter. Spread about 1/2 cup frosting on top and evenly cover.
Place second cake layer on frosting. Frost remaining top and sides of cake. Use offset spatula if available
Notes
You may also use 13x9 inch cake pan. Bake for about 35-40 minutes, cool completely, and frost.
