Cookie Ice Cream Pie
Simple and delicious homemade cookie ice cream pie. Oreo cookies mixed in vanilla ice cream on top of a sugar cone crust. A wonderful summer treat.

Ingredients
- 12 sugar cones
- 5 tbsp butter melted
- 2 tbsp sugar
- 1.5 quarts vanilla ice cream
- 18 oreo cookies coarsely chopped
- 1 cup heavy cream
- 1 tbsp sugar
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350 degrees F. Process sugar cones in a food processor to fine crumbs. Add melted butter and sugar and process until moistened
- Transfer crumb mixture to pie plate. Using the bottom of a dry measuring cup or hands, press crumbs evenly into bottom and up sides of pie plate. Bake until crust is crisp, about 8 minutes
- Scoop vanilla ice cream into large bowl. Using rubber spatula or large spoon, stir and fold ice cream to achieve smooth consistency. Add oreos to ice cream and mix in until well combined.
- Spoon ice cream mixture onto crust in even layer. Place plastic wrap directly on surface of ice cream and freeze until completely frozen, at least 4 hours
- Using electric hand mixture or stand mixer using whisk attachment, whip cream, sugar, and vanilla until stiff peaks form. Spread whipped cream over top of pie before serving
