Chocolate Chip Peanut Butter Oatmeal Cookies
All your favorite cookies are combined in this simple delicious recipe. This cookie dough can be made in no time and you can easily double the recipe for more cookies. I use a cookie scoop to make similar sized cookies. Be warned, these won't last long!

Ingredients
- 1/2 cup butter softened
- 1/2 cup white sugar
- 1/3 cup packed brown sugar
- 1 tsp vanilla extract
- 1 large egg
- 1/2 cup crunchy peanut butter creamy peanut butter if desired
- 1 cup flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 cup rolled oats
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 350 degrees F. Lightly grease cookie sheets or line with parchment paper
- In a medium bowl, cream together the butter, white sugar, and brown sugar until smooth. Beat in the vanilla extract and egg. Beat or mix in the peanut butter until well blended
- In a separate bowl, stir together the flour, baking soda, salt, and rolled oats. Add into butter mixture and stir until combined. Stir in the chocolate chips
- Drop by tablespoonfuls onto prepared baking sheets and slightly flatten cookies. Bake in preheated oven for 10-12 minutes until the edges start to brown. Cool on cookie sheets for 5 minutes then transfer to wire racks to cool completely
