Ingredients
- 1 pound sweet potato
- 1/2 cup butter softened
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1/2 cup evaporated milk
- 2 eggs
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1 tbsp flour
- 1 tsp vanilla extract
- 1 9 inch unbaked pie crust
Instructions
- Preheat oven to 375 degrees F. Place sweet potato on baking sheet and bake for 45 minutes or until fork tender. Decrease oven temperature to 350 degrees F
- When sweet potato is a safe temperature to handle, peel and add potato flesh into large bowl. Add butter and beat well with a hand mixer. Stir in white sugar, brown sugar, evaporated milk, eggs, nutmeg, cinnamon, cloves, flour, and vanilla extract. Beat on medium speed until mixture is smooth. Pour into unbaked pie crust
- Bake in preheated oven for 50 to 60 minutes or until knife inserted in center comes out clean. Pie will puff up while baking but will sink down as it cools
