Chicken and Gnocchi Soup
This soup is fast to whip up and a crowd pleaser. One of my favorite soups!

Ingredients
- 1 tbsp olive oil
- 1 onion diced
- 2 carrots shredded
- 3 celery stalks diced
- 3 garlic cloves minced
- 1 rotisserie chicken deboned and cubed may use cooked chicken breast or whatever cooked chicken you have on hand
- 10 cups chicken broth
- 6 oz spinach coarsely chopped
- 3/4 cup heavy cream
- 1 16 oz package potato gnocchi
Instructions
- Heat olive oil in large pot over medium heat. Cook onions, carrots, celery, and garlic 5-7 minutes stirring occasionally
- Mix in chicken broth and bring to a boil. Add chicken meat and cream, bring soup to simmer
- Add spinach and gnocchi. Simmer on medium low heat for about 10 minutes
Notes
Serve with your favorite crusty bread. Add more or less heavy cream depending on how creamy you prefer your soup.
Very delicious. This one is better than the one at olive garden for sure.
